Reaction between salt and metal
Although the surfaces of stainless steels generally have very good resistance to oxidation, but they get rusted under some special circumstances,one of which is when the surface is stained with salt water or table salt.
Salt water or table salt provides an electrolyte environment that causes cells to form on the stainless steel surface. This type of battery is called a "corrosion battery," in which the surface of the stainless steel acts as the anode and the chloride ions in brine or table salt act as the cathode. In this type of battery, metal on the anode oxidizes and releases electrons, which are then accepted by chloride ions on the cathode and reduced to chlorine gas.
This electrochemical reaction causes the formation of iron oxide (Fe2O3) on the surface of stainless steel, which is rust. When the iron on the surface is oxidized, it loses its original smooth surface and forms a thin iron oxide film on the metal surface. This oxide film is usually thin, clear or light brown, but if the corrosion process continues, it may become thicker and eventually lead to visible discoloration and rust on the stainless steel surface.
Therefore, it is generally recommended to use better quality stainless steel materials for packaging salt, such as 316 stainless steel.
